Ingredients
1 sheet of puff pastry (thawed, if frozen)
2 large onions (thinly sliced)
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon sugar
1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
1 cup grated Gruyère cheese
2 large eggs
½ cup heavy cream
Instructions
Preheat your oven to 400°F (200°C).
Heat olive oil in a large skillet over medium heat. Add the sliced onions, salt, and sugar. Cook, stirring occasionally, for about 20-25 minutes, until the onions are golden brown and caramelized.
Mix in the thyme leaves and cook for another minute. Remove the skillet from heat and let the onions cool slightly.
In a medium bowl, whisk together the eggs and heavy cream. Stir in the caramelized onions and grated Gruyère cheese until well combined.
Roll out the puff pastry on a lightly floured surface to fit your tart pan or a baking sheet. Press it into the bottom and up the sides of the pan.
Pour the onion and cheese mixture into the crust and spread it evenly.
Bake in the preheated oven for about 25-30 minutes, or until the tart is golden brown and puffed.
Allow the tart to cool for a few minutes before slicing. Serve warm or at room temperature.
Notes
For a perfect tart, ensure your onions are well caramelized and the crust is pre-baked to prevent sogginess.
