A delicious and comforting Low Carb Chicken Alfredo with Zucchini Noodles that brings rich flavors and a creamy texture to your table without the excess carbs.

Ingredients

  • 1 lb boneless, skinless chicken breasts (sliced thinly for quick cooking)
  • Salt and pepper (for seasoning)
  • 1 tablespoon olive oil (for sautéing)
  • 4 medium zucchini (spiralized into noodles)
  • 1 teaspoon salt (to drain excess moisture from zucchini)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 2 cloves garlic (minced)
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon red pepper flakes (for added heat)

Instructions

  1. Prepare the zucchini noodles: Spiralize the zucchini into noodles using a spiralizer. Sprinkle them with salt and let them sit in a colander for about 10 minutes to drain excess moisture.
  2. Cook the chicken: While the zucchini noodles are draining, heat olive oil in a large skillet over medium-high heat. Season the sliced chicken with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.
  3. Make the Alfredo sauce: In the same skillet, reduce heat to medium and add the butter and minced garlic. Sauté for about 1 minute until the garlic is fragrant. Pour in the heavy cream and bring it to a simmer. Stir in the Parmesan cheese and black pepper, whisking until smooth and creamy.
  4. Combine everything: Add the drained zucchini noodles to the skillet with the Alfredo sauce, stirring gently to coat the noodles with the sauce. Return the cooked chicken to the pan and mix well until everything is heated through.
  5. Serve: Divide the dish among plates and sprinkle with additional Parmesan cheese and red pepper flakes if desired. Enjoy your Low Carb Chicken Alfredo with Zucchini Noodles warm!

Notes

To avoid watery zucchini, let them drain well after spiralizing. Adjust the seasoning to taste for best results.
