A delightful twist on classic baked potatoes, featuring a creamy, cheesy broccoli sauce for a nourishing meal.

Ingredients

  • 4 large russet potatoes
  • 2 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the russet potatoes by washing and piercing them with a fork. Drizzle with olive oil and sprinkle with salt.
  3. Bake the potatoes for 45-60 minutes until tender.
  4. Make the cheese sauce by melting butter in a saucepan, stirring in flour, and cooking for 1 minute.
  5. Add milk gradually, whisking constantly until the sauce thickens (3-5 minutes).
  6. Incorporate the shredded cheddar cheese until melted and smooth. Season with salt and pepper.
  7. Blanch the broccoli in boiling water for 2-3 minutes until tender-crisp, then drain.
  8. Assemble by slicing open the baked potatoes and fluffing the insides. Pour the broccoli cheese sauce over each potato and serve immediately.

Notes

Russet potatoes give a fluffy texture when baked. Cheddar cheese provides a creamy flavor, but other cheeses can be used. Fresh broccoli is preferred for best texture.
