A delightful dish that combines rich flavors with minimal cleanup, featuring creamy sauce and savory mushrooms, perfect for busy weeknights.

Ingredients

  • 10 ounces pasta (spaghetti, fettuccine, or penne)
  • 8 ounces sliced mushrooms (cremini or button)
  • 4 cloves garlic, minced
  • 1 small onion, diced
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Cook the onions and garlic: Heat olive oil in a large skillet over medium heat. Add diced onion and sauté until translucent, about 3 minutes. Stir in minced garlic and cook for another minute until fragrant.
  2. Sauté the mushrooms: Add sliced mushrooms to the skillet. Cook for about 5-7 minutes, stirring frequently until golden brown.
  3. Add broth and pasta: Pour in the broth, bring to a simmer, then add the pasta. Stir well to ensure pasta is submerged.
  4. Cook the pasta: Simmer over medium heat for about 10-12 minutes, stirring occasionally until pasta is al dente and most broth is absorbed.
  5. Stir in cream and cheese: Lower the heat, add heavy cream, stirring to combine. Gradually mix in Parmesan cheese until melted and sauce is creamy. Season with salt and pepper to taste.
  6. Serve: Remove from heat, garnish with parsley if desired, and serve hot.

Notes

Watch the pasta closely as it cooks; cooking time may vary based on type. For a thicker sauce, let it simmer a few extra minutes after adding cream and cheese.
