Ingredients

  • 2 cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • Green food coloring (for pumpkin decorations)
  • Mini chocolate chips (for ghost eyes)
  • Ghost-shaped candies (optional)
  • Orange fondant (for pumpkins)
  • Black icing (for additional details)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your cake pans by greasing them and placing parchment paper at the bottom for easy removal.
  2. Combine dry ingredients in a large mixing bowl: whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Mix wet ingredients in another bowl by beating the eggs and then mix in the milk, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients, mixing until just combined. Be cautious not to overmix.
  5. Add boiling water gradually to the batter; the mixture will be thin, which is normal.
  6. Divide the batter equally into the prepared cake pans. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  7. Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Transfer to a wire rack to cool completely.
  8. In a mixing bowl, beat the softened butter until creamy. Gradually add powdered sugar and cocoa powder, mixing well. Pour in the heavy cream and vanilla, and blend until smooth and fluffy.
  9. Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, then place the second layer of cake on top and frost the top and sides.
  10. Use black icing to add ghost faces or place chocolate chips for eyes. Decorate with orange fondant pumpkins around the cake to finish.

Notes

Ensure ingredients like eggs and milk are at room temperature for better mixing. Avoid overmixing for a light and fluffy cake, and check for doneness with a toothpick.
