A spooky and delightful Halloween-themed menu perfect for gatherings, offering a fun twist on traditional flavors.

Ingredients

  • 1 lb. ground beef (or plant-based substitute for vegetarian option)
  • 1 cup cooked rice (or quinoa)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (frozen or fresh)
  • 1 cup diced bell peppers (use different colors)
  • 2 cups shredded cheese (mix of cheddar and mozzarella)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Sliced olives (for eyes)
  • Guacamole (for green “slime” effect)
  • Sour cream (for spooky drizzles)

Instructions

  1. Prepare the filling: In a large skillet over medium heat, cook the ground beef (or substitute) until browned. Drain excess fat if necessary. Add cumin, chili powder, salt, and pepper, mixing well.
  2. Mix in vegetables: Stir in the cooked rice, black beans, corn, and diced bell peppers. Continue to cook for about 5-7 minutes.
  3. Layer with cheese: Preheat your oven to 350°F (175°C). Transfer the mixture to a baking dish and top with shredded cheese.
  4. Bake: Place the dish in the preheated oven and bake for 20-25 minutes, until cheese is bubbly and golden.
  5. Garnish creatively: Add sliced olives as spooky “eyes” on top. Drizzle with guacamole and sour cream.

Notes

Don’t overcook the beef to maintain moisture. Feel free to customize with other veggies or spices.
