Ingredients
2 cups tomato puree
1 cup cottage cheese
1 cup vegetable broth
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
Salt and pepper to taste
Fresh basil for garnish
Instructions
Sauté the aromatics: In a pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for about 3-4 minutes until fragrant and the onion is translucent.
Combine the base: Pour in the tomato puree and vegetable broth, stirring well to combine.
Incorporate the cheese: Stir in the cottage cheese, mixing until it’s well incorporated into the soup.
Cook and meld: Allow the soup to cook for about 10-15 minutes, letting the flavors meld together. Stir occasionally.
Season and serve: Season with salt and pepper to taste. Serve hot, garnished with fresh basil for a lovely touch.
Notes
Consider using low-fat cottage cheese for a lighter option. If you’re out of vegetable broth, chicken broth works well as a substitute.
