Ingredients
Baguette: 1, sliced & toasted
Tomatoes: 2 lbs., diced
Garlic: 3 cloves, minced
Fresh Basil: Handful, chopped
Salt & Pepper: To taste
Olive Oil: 2.5 tbsp.
Red Wine Vinegar: 2 tsp.
Mozzarella: Sliced
Balsamic Glaze: For drizzling
Instructions
Preheat your oven to about 400°F (200°C). Place the sliced baguette on a baking sheet and toast for approximately 5 minutes, or until lightly golden and crispy.
Combine the diced tomatoes, minced garlic, chopped basil, olive oil, red wine vinegar, salt, and pepper in a mixing bowl. Stir until well mixed, allowing the flavors to meld.
Spoon the tomato mixture onto the toasted baguette slices, ensuring an even distribution.
Top each toast with slices of fresh mozzarella, allowing the cheese to soften a little from the heat of the baguette.
Finish by drizzling balsamic glaze over the assembled toasts in a ghostly pattern for decoration.
Serve immediately for the best taste and freshness.
