Grilled Steak and Potato Bowls combine hearty ingredients and bold flavors for a satisfying dinner dish that’s easy to prepare.

Ingredients

  • 1 large sweet onion, thinly sliced
  • 3 tablespoons extra virgin olive oil, divided
  • ¾ lb flank steak
  • Steak seasoning (store-bought or homemade)
  • 10 oz baby Yukon Gold potatoes, cut into sixths or quarters
  • Homemade seasoned salt
  • 3 to 4 oz mixed greens
  • 1 cup grape or cherry tomatoes

Instructions

  1. Caramelize the onions by adding 1 tablespoon of olive oil to a 10-inch skillet over medium heat, cooking until golden brown and caramelized, about 20-30 minutes.
  2. Prepare the potatoes by soaking them in cold water for 30 minutes, draining and patting dry, then tossing with 1 tablespoon of olive oil and homemade seasoned salt. Roast in an air fryer or oven until done.
  3. Cook the flank steak by rubbing with remaining olive oil and steak seasoning, grilling on high heat for 1½ minutes per side, then cooking on low heat for an additional 2 minutes per side before resting.
  4. Assemble the bowls by dividing mixed greens, topped with grilled steak, caramelized onions, roasted potatoes, and tomatoes. Drizzle with dressing and serve.

Notes

Tip: Use a meat thermometer for perfect steak doneness; let the steak rest for flavor and tenderness.
