Ingredients

  • 1/4 Korean pear or Fuji apple (60g), grated
  • 3 Tbsp gochujang (58g)
  • 2 tbsp rice vinegar (30g)
  • 2 tbsp sugar (22g)
  • 1 Tbsp soy sauce (16g)
  • 1 large garlic clove, minced
  • 1 Tbsp sesame oil (14g)
  • 1 Tbsp toasted sesame seeds (10g)
  • 160g Somen noodles, dry
  • 1 Japanese cucumber, julienned
  • 1/2 cup kimchi (80g)
  • 4 leaves lettuce, thinly sliced (around 80g)
  • 3 Asian cabbage leaves, thinly sliced (around 130g)

Instructions

  1. Prepare the Sauce: In a bowl, mix together the grated pear or apple, gochujang, rice vinegar, sugar, soy sauce, minced garlic, sesame oil, and toasted sesame seeds. Place in the fridge to chill while you prepare the remaining ingredients.
  2. Slice the Vegetables: Prepare the vegetables by julienning the cucumber and thinly slicing the lettuce and Asian cabbage leaves. Keep them refrigerated to maintain their crispness.
  3. Cook the Noodles: Bring a pot of water to a boil. Add the somen noodles and cook according to the package instructions, usually about 3-4 minutes. Drain well and then shock them in cold water to stop the cooking process. Drain again and rinse with cold water to cool completely.
  4. Assemble the Dish: Place the cooled noodles in the center of a shallow bowl. Arrange the prepared vegetables on top, add the kimchi, and then drizzle the chilled sauce over everything. Toss gently before enjoying!

Notes

Don’t overcook the noodles and ensure chilled ingredients for refreshing taste.
