Japchae is a delicious Korean dish made with stir-fried glass noodles, a mix of vegetables, and tender beef, offering a sweet and savory flavor profile.

Ingredients

  • 8 ounces sweet potato glass noodles (dangmyeon)
  • 1 cup sliced carrots
  • 1 cup bell peppers, sliced (your choice of color)
  • 1 cup spinach
  • 1/2 onion, sliced
  • 1/2 pound beef, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 teaspoon ground black pepper
  • Sesame seeds for garnish

Instructions

  1. Cook the noodles: Boil the sweet potato glass noodles according to package instructions. Once cooked, drain and set aside.
  2. Sauté the beef: In a large pan, heat the sesame oil over medium heat. Add the sliced beef and cook until browned, about 5 minutes.
  3. Add vegetables: Stir in the onions, garlic, carrots, and bell peppers. Sauté for about 5 minutes, or until the vegetables are tender but still crisp.
  4. Combine noodles and spinach: Add the cooked noodles and spinach to the pan. Toss everything together gently to combine.
  5. Mix the sauce: In a small bowl, whisk together the soy sauce, sugar, and black pepper. Pour this mixture over the noodle and vegetable mixture, stirring well to coat everything evenly.
  6. Heat through: Continue to cook everything for an additional 2-3 minutes until everything is heated through and well combined.
  7. Serve: Serve hot, garnished with sesame seeds.

Notes

Feel free to substitute the beef with chicken or tofu for different protein options. You can also mix in other vegetables like mushrooms or green onions based on what you have on hand.
